Horseradishy Beet Relish

A zippy complement to grilled meat.

Servings: Makes around two cups, depending on the size of the beets.

3 tablespoons honey
3 tablespoons cider vinegar
1 ½ tablespoons prepared horseradish (to taste)

Add 3-4 roasted beets, peeled and finely julienned. Salt to taste. Marinate overnight.
